Tuscan Soup

Today I decided to make an easy version of Tuscan soup with bacon. I cooked the bacon, added it to the boiling potatoes, added chopped onion, a bunch of chopped kale, teaspoon of minced garlic, some chopped chives, a chopped bell pepper, salt and pepper. I drained 2/3 of the potato water out careful not to lose the bacon or tiny onions. I then added a quart of chicken stock. I let this come up to a bubble then just on warm. I added more fresh chopped kale. It was quite good. Everything came from my garden except the chicken stock and bacon. Oh, I just about forgot, I added some red pepper flakes. "MMMMMM!"

I love kale in soup. I wish I could have the bacon too!! PS. In answer about the pea hens (not sure how you spell there name!) --they can be very very loud!
