Viennese Cucumber Salad Recipe

We have been blessed with cucumbers so I found my favorite cucumber recipe and decided we should enjoy it once again. It is especially good when the cucumbers are sliced paper thin. The recipe is from this cookbook I purchased years ago when my husband and I stayed in Germany and Austria for five weeks. Here is the recipe:
1 or 2 ripe firm cucumbers, SALT, equal parts oil and vinegar (about a 1 1/2 Tablespoons each), chopped fresh sprig of dill
Test the cucumber to see that it is not bitter. Slice paper thin. Sprinkle with salt and allow to stand, 20 minutes, then pour off the juice that has been made ~~THIS Makes them crisp. Season and mix with the oil and vinegar and chopped fresh dill. ENJOY! “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.” (Genesis 1:29).

Sprinkling the cucumbers with salt and letting them stand, and pouring off the juice makes them crisp!!! Don't forget this step!!

Yummy!!! We have cucumbers and I want to try this recipe. How would adding thin sliced onions to this work?

Yes, Judy, I have been in the habit of adding fresh onion to this and it adds even more flavor!!

I'll have to try this I love cucumbers.
Eric and I went to Austria and Germany Switzerland and France for 3 weeks with our girls, one week was just in Paris.

I have since been back to Germany twice to help my sister move staying 3 weeks at a time. During those stays in Heildelburg I was a local doing what a German would do.

My sister has lived in Germany for years.
