Lemon Raspberry Cheesecake ~The Very Best Recipe

The chocolate, almond, cherry cake turned out so well, I thought I'd try it with a new twist: lemon, raspberry cheesecake.
This cake is easy as pie. All you do is blend these ingredients: 1 box lemon cake mix, 2 eggs, lemon pie filling, cube of butter and cream cheese (soften butter and creamcheese), use only a third of the cream cheese. Place the blended ingredients in the pan and bake for 30 minutes at 350 degrees.

For the frosting cook 1/3 cup of butter with 1/3 cup milk, 1 tsp lemon extract, 1 dot of yellow food coloring and 1 cup powdered sugar on stove. Bring up the heat and boil one minute. Take off the heat and blend in 1 cup sour cream. Spread this frosting over the cake and add raspberry jam for flavor and garnish.
Add an extra dab of sour cream to the top when serving for garnish. Why is this piece so small for the photo? Well, this was the only piece left after our family gathering. I nabbed it for the photo. Have a wonderful Saturday, Ladies. Love, Kathi
