Carrot Cake Recipe

This is the recipe for my wedding cake. I hope you like it as much as we did.

Even though this recipe is called "14 Carrot Cake" it only takes 2 cups of shredded carrot. Enjoy!

14 Carrot Cake


2 cups flour

2 tsp. baking powder

1 1/2 tsp. soda

1 tsp. salt

2 tsp. cinnamon

2 cups sugar

1 12 cups cooking oil

4 eggs

2 cups fresh grated carrot

An 8 oz. can crushed pineapple ~ drained

1/2 cup chopped nuts


Mix flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs; mix well

Add carrots, drained pineapple and nuts. Bake in a large rectangular pan @ 350 degrees for 35 min. or until toothpick comes out clean.


Cream Cheese Frosting


1/2 cup Butter

1/2 lb. Cream cheese

1lb Powdered sugar

1 tsp Vanilla

Cream together adding a little milk if it is too thick

I'm a crazy lady, give me the carrot cake without the frosting---it's just to rich for me. But a homemade carrot cake--yum. It sounds so fall like.

I have used that recipe for about 30 years with just one little change. I add coconut to it. I think one cup.
Everyone loves it and I never have leftovers.

Never met a carrot cake I didn't like...then again I drink carrot juice! LOL! It was a beautiful cake! Yum!

14 Carrot Cake is my all time favorite! ( That is if it can't be chocolate.)My recipe is from Farm Journal's Country Cookbook which I have had for a very long time. Everyone that has had it really loves this recipe. Thanks for the reminder, I think I will go make one right now! :~P
