Carrot Cake Recipe

This is the recipe for my wedding cake. I hope you like it as much as we did.

Even though this recipe is called "14 Carrot Cake" it only takes 2 cups of shredded carrot. Enjoy!

14 Carrot Cake

2 cups flour

2 tsp. baking powder

1 1/2 tsp. soda

1 tsp. salt

2 tsp. cinnamon

2 cups sugar

1 12 cups cooking oil

4 eggs

2 cups fresh grated carrot

An 8 oz. can crushed pineapple ~ drained

1/2 cup chopped nuts

Mix flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs; mix well

Add carrots, drained pineapple and nuts. Bake in a large rectangular pan @ 350 degrees for 35 min. or until toothpick comes out clean.

Cream Cheese Frosting

1/2 cup Butter

1/2 lb. Cream cheese

1lb Powdered sugar

1 tsp Vanilla

Cream together adding a little milk if it is too thick

I'm a crazy lady, give me the carrot cake without the frosting---it's just to rich for me. But a homemade carrot cake--yum. It sounds so fall like.

I have used that recipe for about 30 years with just one little change. I add coconut to it. I think one cup.
Everyone loves it and I never have leftovers.

Never met a carrot cake I didn't like...then again I drink carrot juice! LOL! It was a beautiful cake! Yum!

That recipe sounds wonderful. I was going to buy a carrot cake for my daughter's birthday next month. But I'm really tempted to use your recipe and make my own!

14 Carrot Cake is my all time favorite! ( That is if it can't be chocolate.)My recipe is from Farm Journal's Country Cookbook which I have had for a very long time. Everyone that has had it really loves this recipe. Thanks for the reminder, I think I will go make one right now! :~P

I'm sorry I haven't been by to visit lately, things have been really hectic here lately, but now that John is feeling better and back at work my routine is falling back into line again so I should be by more often now.
