Flaming Soup~ A wonderful Vietnamese lady gave me this recipe. Her mother fixed it daily for her as a child.
Normally flat snow peas, and chunk pineapple are in this, but I was out so I used crushed pineapple and broccoli. It was still very good. I also normally start out with fresh (gray) prawns, which turn pink after three minutes of high heat.
Recipe:
2 quarts of chicken stock
1 pound of fresh prawns
3 green onions chopped
1 cup fresh flat pea pods
1 cup fresh sliced mushrooms
2 diced tomatoes
1 1/2 cups fresh bean sprouts
1 can drained pineapple tidbits
1/2 teaspoon dried red pepper flakes (0ptional)
1/2 cup fresh cilantro ~ essential for flavor
3 celery sticks sliced ~ slant them for style
1 tsp. minced fresh garlic
Follow directions closely: Slice and chop all veggies, open pineapple, wash and prepare prawns. Have everthing ready, THEN heat chicken stock to a bubble and add raw prawns. Cook 3 minutes until pink. Add all other ingredients at once. Stir 1 to 2 minutes. Serve immediately with crusty bread. Enjoy!

That looks so good...we splurged after our evening service and my beloved grilled outside (it was cold) Rib eye steaks...
