Spicy Red Cabbage

We eat at a fabulous Hungarian restaurant, which serves spicy red cabbage. This recipe takes me back to Europe, when I visited Austria, Switzerland and Bavaria, Germany in 1985. Somewhere along the way I was lucky enought to be served this tangy red cabbage.

from the cabbages in my own garden.
RECIPE:

This flavorful dish goes well with chicken or sausage. Perfect for a festive dinner..

1 tbsp olive oil
1 large onion, chopped
1 red cabbage, cored and thinly sliced
2 apples, cored and chopped
1/4 cup red wine
3 tbsp red wine vinegar
3 tbsp brown sugar
1/4 tsp ground cloves
1/4 tsp nutmeg
1/2 tsp cinnamon
Salt and pepper to taste
Directions
Using a large saucepan, heat oil over medium heat and cook onions until soft.
Add cabbage, apples, wine, vinegar, sugar and spices. Simmer until tender, stirring often, about 15 to 20 minutes. Season to taste with salt and pepper.

Hi Kathi~
This brings back lovely memories of my Gram (I was raised by my grandparents). She was German and Rotkohl was at many a harvest time meal. Though I still haven't developed a taste for it, I always love the smell and the beautiful color it displays at the table. I think I will have to try it once again and see if I can train my palette ~ my hubby loves it anyway!
