Pickling Beets In the Heat

Pickled beets taste great in a salad. I grow a few each summer  and use my Ball canning jar booklet recipe.
Even though my house is a bit messy, kids running in and out barefoot, Popsicle sticks laying everywhere, including the bathroom, screen door slamming, flies buzzing, and mercury rising to 89, here I am in the kitchen...
loving every minute of it.
In the morning I am delighted, for my kitchen looks like this. Some of these jars will make it into Christmas baskets for my hair dresser, neighbors and family. Feels good to be preparing for winter.

Ah... beets. I remember thinning sugar beets on the church farms as a kid. Maybe that's why I have never grown or liked beets ...hmm. Your pickled beets are gorgeous! Makes me think about making a few jars too :) Who knows, maybe my tastes have changed and I'll LOVE them :)
You're right.... it does feel good to be canning and getting ready for those long winter months!

Know that happy feeling Kathi, love beets and add to my salads too. Would love to have that pull out drawer when I am canning, I never seem to have any space near the stove.

Your beets look so pretty and tasty. How satisfying it must be to walk into the kitchen and see the jars all lined up. The flowers in the background are pretty too.
