Quick Dinner For Busy Moms

This is one of the meals I fix on Wednesday nights, as this is the longest day for me. I'll tell you why in second.
I got these frozen chicken tenders at COSTCO, which is like Sam's Club. I do visit this store about once a month. You bake these already breaded pieces of chicken for about 20 min. at 425 degrees.
Use this really tasty dipping sauce on the side called Sweet Chili Sauce for Chicken. Open a bag of lettuce and add tomatoes and cukes, and you have a meal. Okay okay... I am not sure that this is the healthiest meal, but it will keep body and soul alive and it will keep busy Mom from getting stressed out.
This is me with my friend Dawn. We sit in the nursery at church and pray together for our children every Wednesday night, while they are attending youth group. We get to church at 6:00 pm, and don't leave until close to 9:00 pm. We both own a copy of Power of a Praying Parent by Stormie Omartian and we use it as our guide. I thank God for my prayer partner, Dawn. We have seen God answer so many prayers. There have been miracles and complete turn arounds with our kids. "The fervent effectual prayer of a righteous man availeth much." James 5:16. I encourage you to ask the Lord for a prayer partner, if you don't already have one. You will be blessed indeed. Have a blessed day, my dear blogging friends.

Hi Kathi,

LOVE the recipe. It's better than my Wednesday night meal...McDonalds. Oh, sometimes we get really crazy and go to KFC or Burger King, too:) I understand the craziness of Wednesdays as I am a youth leader!

Also, I want to thank you for sitting and praying for those kiddo's while they are in youth group. We have some lovely ladies who do that at our church too. It's such an important ministry!

Love and Blessings...

I'm so glad that you have such a great prayer partner. That is awesome! It is so neat to see God answer prayer!

My side bar is working perfectly and your's seems to be fine too. It probably was a blogger glitch. Sometimes that happens.

Have a great day!

Love Sharon

Kathi, We all have shortcut meals at times in order to avoid stress.
Thank goodness they are available to us! I think it's wonderful you have such a nice prayer partner. What would we do without the power of prayer? I do not want to find out. We have a awesome god!!
Hugs, Terrie

it is wonderful that you and your prayer partner can meet each wed nite and pray for the youth as they are studying together.
there is strength in numbers so the two of you can accomplish much...

I will pray for you Kim, to get that perfect prayer partner. God answers that prayer in ways we never dreamed. I just happened to be hanging out in the nursery with my then 5 year old, waiting for youth group to get over.My husband was traveling so that's why my 5 year old was with me. Dawn showed up and started talking with me. We began talking about difficult issues with our kids, and started praying right there on the spot. As time went on some huge huge things came up, in which we decided to make it our purpose to pray while waiting. Our husbands watch our younger boys, while we go to the church, and take our non drivers. I'm actually going to be sad when they start drving. I wanna be there and doing this!!! We'll still pray. I know that!!!

I am all about "short-cut" meals. We all need to spend more time in prayer for our children. My daughter is only four weeks from marriage and I spend quite a bit of time praying for her happiness.

I really love that book as well, it has helped me put words to some of the prayers I want to pray continually over my daughters. When I want to worry about something, instead I need to pick up that book and read a prayer out loud!
What an inspiring mom you are!

Hi Kathi ~ I, too, have that book and I just love it. If you could, please pray for our family ~ more specifically our 16 year old son, Tyler. We are going through such a turbulent time; some days I feel like I'm gonna snap, to be honest. I'm glad you have a prayer partner; it really does make a difference. I don't have one but praying God will have me meet up with someone. Have a blessed day, Kathi!

Yes, Michelle. I will pray for your son, in fact I am starting right now. It's so hard to be the mother of teens. God loves them more than we do, and He trusts us with them, even though we sometimes feel like we've made so many mistkes along the way (I'm speaking of myself). I thought of that verse yesterday, "God causes ALL things to work together for good to them that love God." I kept repeating it yesterday. We have a faithful God. Bless all of you dear mothers out there. Kath

GREAT meal idea. It is important to have that go to meal that always works well on your busy nights to keep us out of McDonalds or something worse. I love that you have a prayer partner, too!

At my house it's fish sticks and tater tots, so you're at least doing better than me. :)

BTW - thanks for the comment on the painting. Very funny.

I have never read that book! I do have "Every Child Needs a Praying Mom" by Fern Nichols. I wish I had a prayer partner around here that I could meet with once a week as well! What a tremendous blessing!! In fact, I think I will start praying to find someone with the same heart as I have. We're in a somewhat new church, so I don't know many people well yet.
