Con Pollo Pasta



Recipe:

1 package cooked long pasta~we like fettuccine


Con Pollo Sauce:

4 boneless chicken breasts cut to bite size pieces,

brown chicken in olive oil over med. high heat, about 8 minutes.

add:

4 chopped green onions

2 tsp. minced garlic

6 sliced mushrooms

1/4 Cup Chardonnay or other white wine ~ optional~

1 can diced tomatoes

keep stirring and lower heat to medium low

add:

2 T. dried or fresh basil

2 T. Parmesan cheese

1 cup frozen peas

about 3/4 cup of the pasta water to thicken sauce

allow sauce to thicken

Pour sauce over pasta and serve with bread

You're very welcome for the award Kathi! If you want to post it on the side bar of your blog, copy it to your desktop, go to customize on your blog, pick "Add a Picture" and you add it there and you can title it whatever you want.

I am supposed to be cleaning the office, Eric is out buying a new desk and it needs to be empty and ready to put the new desk in....I better get back in there!
