Carrot Cake Recipe

This is the recipe for my wedding cake. I hope you like it as much as we did.

Even though this recipe is called "14 Carrot Cake" it only takes 2 cups of shredded carrot. Enjoy!

14 Carrot Cake

2 cups flour

2 tsp. baking powder

1 1/2 tsp. soda

1 tsp. salt

2 tsp. cinnamon

2 cups sugar

1 12 cups cooking oil

4 eggs

2 cups fresh grated carrot

An 8 oz. can crushed pineapple ~ drained

1/2 cup chopped nuts

Mix flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs; mix well

Add carrots, drained pineapple and nuts. Bake in a large rectangular pan @ 350 degrees for 35 min. or until toothpick comes out clean.

Cream Cheese Frosting

1/2 cup Butter

1/2 lb. Cream cheese

1lb Powdered sugar

1 tsp Vanilla

Cream together adding a little milk if it is too thick
"Abagail lost no time....She took 100 cakes of raisins and 200 cakes of figs and loaded them on donkeys." (To give to King David) 1 Samuel 25:18
I hope you enjoy this recipe. Love, Kathi

I'm a crazy lady, give me the carrot cake without the frosting---it's just to rich for me. But a homemade carrot cake--yum. It sounds so fall like.

I have used that recipe for about 30 years with just one little change. I add coconut to it. I think one cup.
Everyone loves it and I never have leftovers.

That recipe sounds wonderful. I was going to buy a carrot cake for my daughter's birthday next month. But I'm really tempted to use your recipe and make my own!

I like your new heading picture:)

Oh yum, I do so love a good carrot cake! Thanks for sharing this Kathi! I'm sorry I haven't been by to visit lately, things have been really hectic here lately, but now that John is feeling better and back at work my routine is falling back into line again so I should be by more often now. Wishing you a lovely day sweetie!

Have you ever considered making the carrot cake without the pineapple? I wonder how it would turn out? Any ideas? Thanks. Diane
