Con Pollo Pasta



Recipe:

1 package cooked long pasta~we like fettuccine


Con Pollo Sauce:

4 boneless chicken breasts cut to bite size pieces,

brown chicken in olive oil over med. high heat, about 8 minutes.

add:

4 chopped green onions

2 tsp. minced garlic

6 sliced mushrooms

1/4 Cup Chardonnay or other white wine ~ optional~

1 can diced tomatoes

keep stirring and lower heat to medium low

add:

2 T. dried or fresh basil

2 T. Parmesan cheese

1 cup frozen peas

about 3/4 cup of the pasta water to thicken sauce

allow sauce to thicken

Pour sauce over pasta and serve with bread

I am supposed to be cleaning the office, Eric is out buying a new desk and it needs to be empty and ready to put the new desk in....I better get back in there!
